Rice has always been a favorite in our household, especially in various Asian dishes. Just because the Specific Carbohydrate Diet strictly prohibits grains doesn’t mean we can’t get creative. There are numerous resources online, including articles and videos, that offer ways to replicate rice using cauliflower, in various textures and forms.
We particularly enjoy cauliflower that’s slightly undercooked, mimicking the texture of well-cooked rice. Feel free to incorporate any additional ingredients to suit your preferred flavor profile.
To prepare “rice” with green onions, as we often do at home, follow these straightforward steps, and you’ll have it ready in just 15 minutes.
Start with a cauliflower, cutting it into smaller pieces. Thoroughly wash and then use a blender to pulse it until it reaches the size of a grain of rice.
In a well-heated pan, add approximately 2 tablespoons of coconut oil.
Take about 3 green onions, chop them into smaller pieces, and sauté them in the coconut oil for around 2 minutes, until they take on a slight golden hue. Then introduce the chopped cauliflower and sauté them together for an additional 5 minutes.
Season with salt and pepper to taste, and serve promptly.
