I’ve come to the delightful conclusion that Alex could happily indulge in peanut butter by the spoonful day in and day out. It seems to be the only thing he craves with unwavering enthusiasm. Andrei, too, is quite fond of it, but Alex’s sheer ecstasy at the mere whiff of peanut butter is something to behold.

In an attempt to diversify from his beloved biscuits, I ventured into creating other recipes. These muffins swiftly earned their place on his list of all-time favorites. Naturally, I had to stow some away, lest they vanish in a blink.

Despite Alex’s general aversion to frosting, I dared to try a peanut butter frosting, which, as expected, he absolutely adored!

I encourage you to give this recipe a whirl, with one vital piece of advice: opt exclusively for organic peanut butter. Peanuts are notorious for their high pesticide content, and opting for organic ensures a cleaner, healthier choice.

Here’s what you’ll need:

½ cup of coconut flour
½ teaspoon of baking soda
4 eggs
¼ cup melted coconut oil
¼ cup honey or 2 tablespoons xylitol
1 small zucchini
A cup of peanut butter
A teaspoon of vanilla essence
¼ cup of walnuts
Begin by combining all the dry ingredients in a bowl.

Clean and blend the zucchini with the nuts and the wet ingredients until a creamy consistency is achieved.

Finally, incorporate the dry ingredients and pour the batter into muffin molds. Bake for about 20 minutes or until a toothpick inserted in the center emerges dry.

Once they’ve cooled for 15-20 minutes, you have the option to glaze them with a delectable peanut butter glaze, or any glaze of your choice.

For the peanut butter glaze, you’ll need half a cup of peanut butter, a teaspoon of honey, and a teaspoon of ghee. Combine all these in a bowl and use a mixer until you achieve a creamy, consistent texture.

If you prefer a slightly thicker glaze, consider using a denser peanut butter and only a teaspoon of honey, omitting the teaspoon of ghee.

I opted for creamy peanut butter, as it’s our personal favorite.
