Originating from India, clarified butter boasts a wide array of health benefits and remains a staple in many Indian households. Some of my Indian friends even incorporate a teaspoon of ghee into their morning coffee.

This golden elixir is packed with omega-3 fatty acids, essential amino acids, and vitamins A, D, and E. It aids in inflammation reduction, aids digestion, and boasts a high smoke point of 250 degrees Celsius, making it a versatile choice for baking and sautéing in various recipes.

The process of clarifying butter is remarkably straightforward. My key recommendation is to opt for the purest butter available, free of additives or salt, preferably sourced from small-scale producers or trusted local suppliers.

Here’s a step-by-step guide:

Place the butter on very low heat and allow it to melt. Let it simmer until the foaming subsides, and you can observe the milk proteins settling at the bottom of the pot. It’s advisable not to skim off the foam, as doing so will not contribute significantly and will reduce the final yield of clarified butter.

Once you notice the separation of the protein at the bottom of the pot, turn off the heat promptly and strain the butter. It’s important not to delay this step, as the butter can easily burn during this phase.

To strain the butter, employ a metal strainer lined with cheesecloth to ensure no remnants of foam pass through.

Directly pour the strained butter into a glass jar. From one kilogram of high-quality butter, you can expect to yield about 800 grams of ghee.

After cooling, it will bear the appearance of homemade butter. Store it at room temperature, as it does not go rancid.
