On a chilly, rainy day, there’s nothing quite like a comforting bowl of vegetable soup. It’s both simple to prepare and gentle on the digestive system. This recipe caters to those following the Specific Carbohydrate Diet, as well as individuals with gluten or casein intolerances.
Ingredients:
- 1 medium-sized white onion, finely chopped
- 2 cloves of garlic, finely chopped
- 3-4 stalks of celery, chopped
- 1 large carrot, diced into small cubes
- 1 parsley root, diced into small cubes
- ½ cup of peas
- 3-4 tomatoes, diced into small cubes
- 1 medium-sized zucchini, diced into small cubes
- 2 cups of cauliflower, cut into small florets
- 2 cups of broccoli, cut into small florets
- 1 cup of tomato juice
- Salt and pepper to taste (Himalayan salt recommended for its rich mineral content)
- 1 teaspoon of turmeric (known for its wonderful anti-inflammatory properties)
- 1 bunch of fresh lovage, finely chopped
- 2 tablespoons of ghee
Instructions:
Heat the ghee in a large pot. Add the onion, garlic, celery, carrot, and parsley. Sauté for a few minutes.
Add all the remaining ingredients, except for the cauliflower and broccoli. Pour in enough water to cover the vegetables and bring to a boil. Simmer until they are nearly fully cooked.
Add the cauliflower and broccoli and continue to cook until they are completely tender.
Turn off the heat and stir in the freshly chopped lovage.
