Peanut butter is a cherished favourite in our household, especially for Alex, who can’t resist a jar of it. To create a hearty and nutritious treat, I blended peanut butter with cold-pressed coconut butter and wild mountain honey, resulting in a rich source of vitamins, minerals, and healthy fats.

This delightful no-bake recipe is a breeze to make. Here’s what you’ll need:

Ingredients:

  • 1 and 1/2 cups of pure, organic peanut butter (without any additives)
  • 1/2 cup of cold-pressed organic coconut butter
  • 1/4 cup of honey
  • 2 tablespoons of ice
  • 1/4 teaspoon of Himalayan salt
  • 1/2 teaspoon of coarse non-iodized sea salt

Here’s how to prepare it:

Melt all the ingredients (excluding the coarse sea salt) in the top bowl of a double boiler. Ensure the bowl doesn’t touch the simmering water.

While still on the stove, use a hand mixer to blend the mixture until smooth and well combined.

Once homogenous, transfer the mixture onto a parchment-lined baking tray and place it in the freezer.

Sprinkle the coarse sea salt on top and let it freeze for an hour. Then, move it to the fridge.

For my servings, I cut them into cubes and froze them entirely on the baking tray. Afterwards, I stored them in a sealed plastic bag back in the freezer.

When Alex craves peanut butter caramel, I take a few cubes out, let them sit in the fridge or at room temperature, and he enjoys them with great delight.

Please note: If kept at room temperature, they may soften.
