One day, while in a rush, I had the idea to simplify my chicken croquette recipe by combining all the breading in one bowl. As I tossed the chicken into the mix, I remembered how much Andrei enjoys Shanghai chicken, so I decided to add some sesame seeds. It turned out to be a wonderful creation.
I’m excited to share this recipe with you, especially for those busy days when time is limited. It’s a delightful and speedy dish.
Ingredients:
- 1 chicken breast
- Marination: salt, pepper, paprika, garlic powder, and onion powder
- 2-3 eggs (quantity depends on breast size and almond meal type)
- 1 cup almond meal
- 1/4 cup hulled sesame seeds.
Begin by cutting the chicken breast into strips or pieces of your preference. Gently pound them with a meat mallet, then let them marinate.
In a separate bowl, whisk the eggs with a touch of Himalayan salt. Add the almond meal and sesame seeds.
Coat the marinated chicken pieces in the breading mixture, ensuring they’re well-covered.
In a pan, heat some pure, flavorless, and odorless cold-pressed coconut oil. Fry the chicken pieces until they’re golden on both sides.
Serve them hot or cold—perfect for hikes, as they’re satisfying and easy to carry.
Enjoy your Shanghai Chicken! If you have any more requests or need further assistance, feel free to ask.
