I fondly recall the days when Alex had trouble with chewing, especially when he craved something sweet and his options were so limited. I was determined to find a treat that not only provided the sweetness he desired but also packed a higher caloric punch.

Almost serendipitously, I stumbled upon his all-time favorite biscuit recipe. To this day, they remain his go-to biscuits. I make them secretly, usually late at night after he’s fallen asleep, and portion them out. Otherwise, he’d happily devour the whole batch in one go, neglecting any other food for the entire day.

These biscuits come together swiftly and effortlessly, following the recipe below:

  • 1 jar of organic peanut butter (opt for organic to avoid potential pesticide residues, as peanuts are known to retain them).
  • 2 eggs
  • 1/3 cup xylitol or raw honey
  • ΒΌ cup coconut flakes

Simply blend all the ingredients together, shape the mixture into “balls,” and then gently press them by hand to form round biscuits. For a classic finish, press them with a fork in a cross shape. Bake for approximately 5-10 minutes. Be vigilant, as they can brown quickly if they’re already well-baked.

I’ve noticed that the texture is finer, and the dough is easier to work with if you avoid using a blender. Instead, mix it by hand with a fork or whisk. Enjoy these delectable peanut butter biscuits, tailored for even the most sensitive palates.
